A Look Into My Gluten-Free Dessert Eating

August 01, 2013

Recently I've gone gluten-free--which does not mean dessert-free. Although I have created some of my own GF dessert recipes (excellently so!) there are countless times that I just want to follow the directions of someone else's creation. Luckily, there are plenty of amazingly talented GF bakers out there to follow. So here I’ve rounded up my 6 favorite gluten-free dessert recipes from around the Interwebs. Give them a try, bake your butt off, and report back! Chocolate chip cookies from Elena’s Pantry. Elena has written several gluten-free cookbooks and is an expert in the GF baking field. This classic cookie recipe proves Elena’s expertise, hands down. Oatmeal Raisin Cookies by Gluten-Free Goddess. I’m on a total cookie kick lately. Maybe it’s the summer days or maybe it's my ability to eat 6 cookies in one sitting. Whichever it is, these oatmeal raisin cookies fulfill every cookie craving I think I could ever have. The recipe’s a bit lengthy but don’t let that steer you away; if you do, you’ll be sorry. Peanut Butter & Marshmallow Sandwich Cookies by Beard and Bonnet. Ok, one more cookie recipe—just one, I promise. I’d kick myself if I left this one out! If the oatmeal raisin cookie recipe frightened you due to its length, you’ll hug me for linking you to this one. Just four ingredients. Hop to it now! Get baking. No Bake Key Lime Pie by Gluten Free on a Shoestring. This pie is perfect for those 90 degree days because you don’t even have to turn your oven on. A dessert cooling your mouth while it stays cool in your house? Double win. Chocolate Brownies by David Lebovitz. Did you know that David Lebovitz is a dessert god? Well he is. That’s all you really need to know in order to make these brownies. Right now. Pumpkin Whoopie Pies by Deliciously Organic. A pillowy pumpkin sandwich with a rich cream filling. Does more need to be said? You can even substitute the accompanying filling recipe for your favorite Vanilla Buttercream or Pumpkin Cream Cheese Frosting recipe from The Dollop Book of Frosting: Sweet and Savory Icings, Spreads, Meringues, and Ganaches for Dessert and Beyond. Give these people  a shout when you swing by their pages. I can't wait to hear how your GF baking adventures go! What's your favorite GF recipe?
